Corn Casserole with Bacon

A fresh corn casserole mixed with bacon, green onions, and spices in a creamy sauce.
  • 6 slices bacon
  • ½ onion, chopped
  • 2 T. flour
  • 2 garlic cloves, minced
  • salt and pepper
  • ½ c. sour cream
  • ½ c. evaporated milk
  • 4 c. fresh corn (4 or 5 cobs)
  • 1 T. fresh parsley, chopped
  • 1 t. paprika
  • 4 green onions, chopped
  1. Preheat the oven to 350 degrees. Spray an 8 x 8 baking dish with cooking spray.
  2. Cook the oven in a large saute pan until browned. Remove from the pan and drain on a paper towel.
  3. Remove all but 2 tablespoons of bacon fat from the pan.
  4. Add the onion to the pan with the bacon fat and saute for 4 minutes over medium heat.
  5. Stir in the flour, garlic, salt, and pepper. Cook for 1-2 minutes.
  6. Remove from heat and stir in sour cream, evaporated milk, and corn. Mix well until combined.
  7. Crumble half the bacon into the mixture and stir.
  8. Pour the corn mixture into the prepared pan. Crumble the remaining bacon on top of the casserole.
  9. Bake for 20 minutes. Remove from oven and sprinkle the parsley, paprika, and green onions.
