Leftover Mashed Potato Puff Casserole

Have leftover mashed potatoes? Re-purpose them in this delicious Potato Puff Casserole mixed with cheese and sour cream.
  • 3 c. mashed potatoes
  • 1 egg
  • ⅓ c. sour cream
  • 3 T. Parmesan cheese
  • ½ c. cheddar cheese, shredded
  • 2 garlic cloves, minced
  • 1 t. paprika
  • 2 T. chives, minced
  1. Preheat the oven to 400 degrees. Spray a 7 x 11 baking dish (or 9 x 9 baking dish) with cooking spray. Set aside.
  2. In a large bowl combine the mashed potatoes, egg, sour cream, Parmesan, cheddar cheese, and garlic cloves. Mix well and put in the prepared pan. Sprinkle with paprika.
  3. Bake for 30 minutes.
  4. Turn the oven to broil and broil for 2-3 minutes or until the top is golden brown.
  5. Remove from oven and sprinkle with fresh chives. Serve with sour cream.
