Thin Mint Stuffed Cookies

Make a fun Thin Mint stuffed chocolate cookie for St. Patrick's Day!
  • 1 Box Chocolate Cake Mix
  • ⅓ c. butter, melted
  • ½ t. vanilla
  • 8 oz. cream cheese, softened
  • 1 egg
  • powdered sugar
  • 1 box Thin Mint cookies
  • 1 c. green M&M's
  1. Combine the chocolate cake mix, butter, vanilla, cream cheese, and egg in a large bowl.
  2. Using a mixer mix on medium speed until the dough is smooth and combined.
  3. Refrigerate the dough for 1 hour.
  4. When ready to make the cookies preheat the oven to 350 degrees.
  5. Pick one tablespoon of dough out of the bowl and flatten it. Place a Thin Mint on the dough and then cover it with the excess dough.
  6. Roll the dough in powdered sugar and place on a cookie sheet. Repeat with remaining cookies.
  7. Top the cookies with several green M&M's.
  8. Bake for 11-13 minutes. Remove from oven and cool for 1 minute. Remove the cookies to a wire rack and cool completely.
