Spring Confetti Cookie Bars

A sweet sugar cookie stuffed with white chocolate chips and topped off with pastel colored M&M's and marshmallows.
  • ½ c. butter, softened
  • ½ c. sugar
  • ¼ c. brown sugar
  • 1 egg
  • 1 t. vanilla
  • 1½ c. flour
  • ½ t. baking soda
  • 1 t. baking powder
  • ½ t. salt
  • 1¼ c. white chocolate chips. divided
  • 3 c. pastel colored mini marshmallows
  • 1 c. White Chocolate Easter M&M's
  • 3 T. pastel sprinkles
  1. Preheat the oven to 350 degrees.
  2. In a large bowl combine the butter, sugar, and brown sugar. Mix well to combine.
  3. Add in the egg and vanilla and mix well.
  4. In a medium bowl combine the flour, baking soda, baking powder, and salt. Mix and then add to the butter mixture. Mix until combined.
  5. Gently fold in 1 cup of the white chocolate chips.
  6. Spread into a 9 x 13 pan sprayed with cooking spray and then bake for 15 minutes.
  7. Remove from the oven and sprinkle with marshmallows and M&M's. Place back in the oven for 3-4 minutes or until marshmallows just start to brown.
  8. Quickly sprinkle with remaining white chocolate chips and sprinkles.
  9. Cool completely on a wire rack.
