Mediterranean Hummus Stuffed Mushrooms

Serves: about 30 mushrooms
Snack time goes Mediterranean with mushrooms stuffed with Sabra hummus, feta cheese, roasted red peppers, and breadcrumbs.
  • 1 lb. whole mushrooms
  • ½ c. Sabra classic hummus
  • ¼ c. Panko breadcrumbs
  • 2 T. roasted red peppers, chopped
  • 1-2 t. lemon juice
  • 3 T. feta cheese, crumbled
  • 1 t. dried chives
  1. Preheat the oven to 400 degrees.
  2. Wash the mushrooms and pull out the stems.
  3. Spray a 9 x 13 baking dish with baking spray and place the mushrooms, hole side up, in the dish.
  4. In a medium bowl combine the Sabra hummus, breadcrumbs, red peppers, lemon juice, feta, and chives. Mix well.
  5. Place 1-2 teaspoons of filling in each mushroom cap. Mound the filling up on top of the mushroom.
  6. Bake for 13-15 minutes or until the filling starts to brown. Broil for 1 minute.
  7. Remove from the oven and enjoy immediately.
