Pierogi with Sausage and Peppers

Make a delicious one pot meal on the stove top with this Pierogi, Sausage, Peppers, and Onion dish.
  • 1 lb. potato and cheese pierogies (about 1 dozen)
  • 12 oz. sweet Italian sausage, casings removed and crumbled
  • 2 bell peppers, thinly sliced
  • 1 onion, thinly sliced
  • 4 garlic cloves, minced
  • 1 t. oregano
  • 2 T. butter
  • salt and pepper
  1. Bring a pot of water to boiling. Add the pierogies and cook for 5-7 minutes or until they are cooked through. Drain, reserving ½ cup of the pasta water.
  2. Meanwhile, put the sausage in a skillet over medium high heat and cook for 6-8 minutes or until browned.
  3. Reduce heat to medium and add in the peppers, onions, and garlic. Cook for 5 or 6 minutes or until the vegetables begin to soften.
  4. Add in the oregano, butter, salt and pepper and cook for 1-2 minutes.
  5. Add the pierogies along with ¼ cup of the reserved pasta water and cook for 1-2 minutes or until everything is well combined.
  6. Serve hot.
