Roasted Fingerling Potatoes

Delicious tri-colored potatoes tossed with butter, garlic, and seasonings for a simple and tasty side dish.
  • 1½ pounds fingerling potatoes, cut in half
  • 4 T. butter
  • 4 garlic cloves, minced
  • 2 t. salt
  • 1 t. black pepper
  • 2 t. paprika
  1. Preheat the oven to 400 degrees.
  2. Melt the butter in a microwave safe bowl and mix in the garlic cloves, salt, pepper, and paprika.
  3. Place the potatoes on a baking sheet and toss with the butter mixture.
  4. Bake for 45 minutes, turning the potatoes every 15 minutes.
  5. Remove from oven and garnish with fresh parsley or sea salt.
