Slow Cooker Italian Pot Roast Sandwiches

An easy and flavorful sandwich made with beef and peppers.
  • 3 lb. bottom round roast (I used Certified Angus Beef Brand)
  • Kosher salt and black pepper
  • 1 onion, chopped
  • 2 bell peppers, cut into strips
  • 1 T. Italian seasoning
  • 6 garlic cloves, minced
  • ½ c. red wine
  • 3 c. beef stock
  • 6 hoagie rolls
  1. Rub the bottom round roast with salt and pepper and place in the slow cooker.
  2. Sprinkle the onions and peppers around the roast in the slow cooker.
  3. Add in the Italian seasoning, garlic cloves, red wine, and beef stock.
  4. Cook on low for 8 hours.
  5. Pull the beef into chunks and mix with the vegetables and beef stock in the slow cooker.
  6. Put the beef, onions, and peppers on each of the hoagie rolls and then spoon out some of the au jus to dip the sandwiches in. Enjoy!
