Coffee Cake

A delicious cake topped with a spiced, crunchy topping.
For the cake:
  • 1½ c. flour
  • ½ c. sugar
  • 2 t. baking powder
  • 1 t. salt
  • 1 egg
  • ½ c. milk
  • 2 T. vegetable oil
  • 2 t. vanilla
For the topping:
  • 1¼ c. flour
  • ½ c. brown sugar
  • 2 t. cinnamon
  • 1 t. salt
  • ½ c. butter, melted
  1. Preheat the oven to 325 degrees. Spray an 8 x 8 baking dish with cooking spray and set aside.
  2. In a large bowl combine the flour, sugar, baking powder, and salt. Mix well.
  3. In a medium bowl combine the egg, milk, vegetable oil, and vanilla. Mix well.
  4. Pour the wet ingredients into the dry ingredients and mix until combined. Pour into the prepared pan.
  5. In a small bowl combine the flour, brown sugar, cinnamon, salt, and butter. Mix with a fork and then sprinkle over the top of the cake.
  6. Bake for 35-40 minutes. Remove from oven and cool completely. Cut into 9 squares.
