A delicious soup filled with vegetable, cabbage, and smoked sausage.
  • 1 T. olive oil
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 potato, diced
  • 4 garlic cloves, minced
  • 1 lb. smoked sausage, sliced
  • 1 c. beer (preferably lager)
  • 3 c. chicken broth
  • 1 T. Dijon mustard
  • 1 (28 oz) can of diced tomatoes in juice (I used tomatoes with chilies in it for some spice)
  • 1 small head of cabbage, thinly sliced
  • 1 t. caraway seeds
  • 1 t. salt
  • 1 t. black pepper
  1. Press the saute button on the Instant Pot and heat the olive oil. Add in the onion, carrot, and celery and saute for 3-4 minutes. Add in the potatoes and garlic and saute for 3 minutes.
  2. Add the sausage to the pot and stir fry for 3 minutes.
  3. Pour in the beer to deglaze the pot. Change the setting to Less and simmer for 5 minutes. Add in the broth, mustard, tomatoes, cabbage, caraway seeds, salt, and pepper.
  4. Place the lid on and lock.
  5. Press the soup button and adjust the time to 20 minutes. When the timer goes off let pressure release naturally for 5 minutes then quick release the remaining pressure.
  6. Ladle into bowls and serve with bread.
