Crispy Gnocchi with Mushrooms and Arugula

Crispy gnocchi in a butter sauce with mushrooms, shallots, and arugula.
  • 1 T. olive oil
  • 8 oz. mushrooms, sliced
  • 2 shallots, chopped
  • 4 garlic cloves, minced
  • 2 t. sage
  • 2 t. oregano
  • 3 T. butter
  • 16 oz. refrigerated gnocchi
  • 1 t. sea salt
  • 1 t. black pepper
  • 1½ c. baby arugula
  • ½ c. Parmesan cheese, grated
  1. In a large skillet heat the olive oil over medium high heat. Add in the mushroom, shallots, garlic, sage, and oregano. Cook, stirring occasionally, until the mushrooms bring to brown, about 10 minutes. Transfer to a plate.
  2. Add the butter to the same skillet over medium heat. Melt the butter then add in the gnocchi. Cook for 8-10 minutes or until the gnocchi is cooked through and crispy. Season with salt and pepper.
  3. Stir in the arugula and mushroom mixture and cook for 2-3 additional minutes.
  4. Remove from heat and sprinkle with the Parmesan cheese.
