Baby Food Friday: Healthy Zucchini Muffins for Babies or Toddlers

Healthy Zucchini Muffins are a great way to get babies or toddlers to eat fruits and vegetables without all the added sugar.
  • 1 c. flour
  • ½ c. baby oatmeal (or oats)
  • 1 t. baking soda
  • 1 t. salt
  • 1 t. cinnamon
  • 2 eggs
  • 1 c. zucchini, grated
  • ¼ c. butter, melted (or vegetable oil)
  • ½ c. applesauce
  • 2 bananas, mashed
  • ½ c. chopped fruit (strawberries, peaches, blueberries, or plums work well)
  1. Preheat the oven to 350 degrees. Spray a mini muffin tin with cooking spray.
  2. In a large bowl combine the flour, oatmeal, baking soda, salt, and cinnamon. Mix well and set aside.
  3. In a small bowl beat the eggs.
  4. Add the eggs, zucchini, butter, applesauce, and bananas to the dry mixture and mix until combined.
  5. Fold in the fruit.
  6. Pour the batter into the prepared muffin cups filling almost to the top of the cups.
  7. Bake for 15-18 minutes or until golden brown.

**If freezing wrap the muffins in plastic wrap then place in a zip top freezer bag. Thaw on the counter 20 minutes before serving. Can be frozen for up to 3 months**
