Grilled Spinach Caprese Veggie Burger Stacks

A delicious and filling vegetarian appetizer perfect for summer cook outs these grilled veggie burgers with mozzarella, spinach, and tomatoes will have vegetarians and meat lovers asking for more!
  • 4 MorningStarĀ® Farms Veggie Lovers Burgers
  • ½ c. cherry tomatoes
  • ½ c. mozzarella cheese, shredded
  • ½ c. fresh spinach
  • 2 T. balsamic vinegar
  1. Heat the grill to medium heat.
  2. While the grill is heating up skewer 16 cherry tomatoes on 2 skewers.
  3. Place the veggie burgers on the grill along with the tomato skewers. Cook for 4 minutes then flip both the burgers and the tomato skewers.
  4. After another 2 minutes remove the tomato skewers from the grill.
  5. Divide the mozzarella cheese between the 4 veggie burgers and shut the lid on the grill. Cook for 2 minutes.
  6. Divide the fresh spinach on top the veggie burgers, shut the lid, and cook for 2 more minutes.
  7. Remove the veggie burgers from the grill.
  8. Carefully take the blistered tomatoes off of the skewers and cut in half. Place 6-8 halves on top of each veggie burger. Drizzle with the balsamic vinegar.
  9. Serve immediately.
