A delicious and filling vegetarian appetizer perfect for summer cook outs these grilled veggie burgers with mozzarella, spinach, and tomatoes will have vegetarians and meat lovers asking for more!
Ingredients
4 MorningStarĀ® Farms Veggie Lovers Burgers
½ c. cherry tomatoes
½ c. mozzarella cheese, shredded
½ c. fresh spinach
2 T. balsamic vinegar
Instructions
Heat the grill to medium heat.
While the grill is heating up skewer 16 cherry tomatoes on 2 skewers.
Place the veggie burgers on the grill along with the tomato skewers. Cook for 4 minutes then flip both the burgers and the tomato skewers.
After another 2 minutes remove the tomato skewers from the grill.
Divide the mozzarella cheese between the 4 veggie burgers and shut the lid on the grill. Cook for 2 minutes.
Divide the fresh spinach on top the veggie burgers, shut the lid, and cook for 2 more minutes.
Remove the veggie burgers from the grill.
Carefully take the blistered tomatoes off of the skewers and cut in half. Place 6-8 halves on top of each veggie burger. Drizzle with the balsamic vinegar.
Serve immediately.
