Apple Pie Granola

Serves: 5 cups
- 3 c. rolled oats
- 1 c. nuts, chopped (I used almonds)
- 1 T. apple pie spice (or 2 t. cinnamon, 1 t. nutmeg, ½ t. ground cloves)
- 1 t. sea salt
- 1 apple, diced (I left the skin on but you can peel it if desired)
- ⅓ c. coconut oil, melted
- ½ c. applesauce
- ¼ c. Imperial Sugar granulated sugar
- 3 T. Imperial Sugar brown sugar
- Preheat the oven to 350 degrees. Line a baking pan with parchment paper or a silicon baking mat. Set aside.
- In a large bowl combine the oats, nuts, apple pie spice, salt, and apples. Mix well and set aside.
- In a small bowl combine the coconut oil, applesauce, granulated sugar, and brown sugar. Mix well.
- Pour the sugar mixture over top of the oat mixture and mix well to combine. I ended up using my hands to mix it together.
- Pour the granola onto the prepared baking pan. Spread it out in a thin layer.
- Bake for 1 hour, stirring every 15 minutes.
- Remove from oven and allow to cool for 30 minutes. Break into pieces and store in an air tight container for up to 1 week.
