Egg Roll in a Bowl with Tofu

Like egg rolls but don't want to make them? Try my tasty Egg Roll in a Bowl made with tofu and topped with crispy noodles!
  • 1 lb. tofu, drained, pressed, and cut into ½ inch cubes
  • 1 T. olive oil
  • 1 bag coleslaw mix
  • 5 garlic cloves, minced
  • 1 onion, chopped
  • 1 t. ginger, grated
  • 1 T. sesame oil
  • ½ c. soy sauce
  • ⅓ c. vegetable or beef broth
  • salt and pepper
  • 2 cups rice, cooked
  • 1 c. crispy Chinese noodles
  1. Heat the olive oil in a large skillet over medium high heat.
  2. Add the tofu and stir fry for 5-8 minutes or until it is brown and crispy.
  3. Add in the coleslaw mix, garlic cloves, onion, ginger, and sesame oil and saute for 3-4 minutes or until cabbage begins to wilt.
  4. Add the soy sauce, beef broth, salt, and pepper and cook, stirring frequently, for 2-3 minutes.
  5. Divide the rice between 4 bowls. Divide the tofu mixture between 4 bowls. Top with crispy noodles.
