  • 2 c. reduced fat milk
  • 2 c. chicken broth
  • 2 (9 oz) packages precooked brown rice
  • 3 c. broccoli florets

  • 1 t. pepper
  • ½ t. thyme
  • ½ c. crispy fried onions
  1. Preheat the oven to 400 degrees.

  5. Gradually whisk in the flour milk mixture. Return to a boil and cook, stirring frequently, until thickened.
  6. Stir in rice, broccoli, onion, and garlic. Return to a boil and cook for 3-4 minutes.
  7. Stir in the chicken, cheese, salt, pepper, and thyme.
  8. Pour the chicken and rice mixture into a baking dish. Top with crispy fried onions.
  9. Bake for 20 minutes or until the casserole is bubbling.
  10. Remove from oven and cool for 5 minutes.
