Copycat Starbucks Lemon Loaf

A delicious quick bread made with fresh lemon juice and zest and a lemon glaze on top!
For the lemon loaf:
  • 1½ c. flour
  • ½ t. baking powder
  • ½ t. baking soda
  • 1 t. salt
  • ½ c. butter, softened
  • 1 c. sugar
  • 3 eggs
  • 1 t. vanilla
  • zest of 1 large lemon or 2 medium lemons
  • 4 T. fresh lemon juice
  • ⅓ c. milk
For the glaze:
  • 1 c. powdered sugar
  • 2 T. fresh lemon juice
  • 1 T. milk
  1. Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray.
  2. In a large bowl combine the flour, baking powder, baking soda, and salt. Mix well and set aside.
  3. In a medium bowl cream together the butter and sugar.
  4. Add the eggs and vanilla to the bowl and mix until light and fluffy.
  5. Stir in the lemon zest and lemon juice and mix well.
  6. Add the lemon and butter mixture to the flour mixture and stir. Add in the milk and stir until well combined.
  7. Pour the mixture into the prepared loaf pan.
  8. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool on a wire rack for 15 minutes. Run a butter knife around the edges and remove from the pan. Cool completely.
  10. To make the glaze whisk the powdered sugar, lemon juice, and milk together. Pour over top of the cooled lemon loaf. Allow glaze to harden 15 minutes.
  11. Slice into pieces and serve.
