I can’t believe my baby is going to be 4 months old next week!  I’ve been lucky enough to have been able to stay home with him for 16 weeks before going back to work.  During this time I always made sure he was healthy but I had to really take some time out to focus on myself and make sure I was healthy so that I was able to keep him healthy as well.

Another way to make sure I was staying healthy was to get some sleep.  This was hard the first 6 weeks after giving birth but my husband and I worked together to make sure we each got enough sleep to function everyday.  When one of us was exhausted the other would get up during the night and feed the baby or would take the baby for a ride so the other one could nap.  Working together helped keep all 3 of us healthy.

Another thing I did to make sure that I was staying healthy was to eat breakfast every morning.  During the first few weeks after giving birth I would forget to eat and then wonder why I was so cranky.  Now I make sure I have a healthy and filling breakfast everyday.  One of my favorite healthy breakfast items is Apple Cinnamon Overnight Oats.

I love these overnight oats because I can make several jars of them on the weekend and put them in the refrigerator.  Then I just take them out throughout the week and eat them when I have a minute.  You can enjoy them cold out of the refrigerator or warm them up in the microwave.  The apples add additional flavor and nutrition to this tasty breakfast.

Another thing I love about Apple Cinnamon Overnight Oats is that I can simply put my prenatal vitamin on the spoon with some of these oats and the easy-to-swallow softgel goes right down.  It’s now a part of my regular breakfast routine!  I like to have a cup of coffee, my overnight oats, and my Nature Made® Prenatal Multi + DHA.

Apple Cinnamon Overnight Oats

Apple Cinnamon Overnight Oats

Total Time: 10 minutes

An easy to make and filling breakfast that can be made days in advance and enjoyed anytime hot or cold!

Ingredients

  • 1/3 c. quick oats
  • 1/3 c. milk
  • 1/3 c. vanilla or plain yogurt
  • 1 Tablespoon honey
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt.
  • 1 apple, cored and diced
  • 2 Tablespoons walnuts, chopped

Instructions

  1. In a half pint jar combine the oats, milk, yogurt, honey, cinnamon, nutmeg, and salt. Place the lid on and shake well.
  2. Open the lid and add apples and walnuts.
  3. Place the lid back on and refrigerate at least 8 hours.
  4. Open the lid and enjoy cold or remove lid and microwave 45 second to eat it hot.
  5. *You can make multiple jars and keep them in the refrigerator for up to 5 days.*
