Meal Plan Mondays #10 is back with 14 tasty recipes to help you plan your menu this week! After a busy holiday weekend for many people I know I'm ready for some easy recipes this week.
I don't know about you but after the holidays I often have a lot of leftovers laying around. While I'm good for eating the actual leftovers one time after that I want to repurpose them into something else. I've got a few recipes for using up leftover ham, mashed potatoes, and bread or rolls.
Recipes for Using Holiday Leftovers:
- Muffuletta Sandwich (use leftover turkey or ham)
- Macaroni and Cheese with Ham (use leftover ham)
- Leftover Mashed Potato Puff Casserole (use leftover mashed potatoes)
- Mashed Potato Souffle (use leftover mashed potatoes)
- Apple Bread Pudding with Butterscotch Sauce (use leftover bread)
I also tend to use leftover meat in sandwiches. It's nice to be able to take leftovers to work and not have to worry about finding something to eat for a few days.
Did you know you can also freeze leftover turkey or ham? One of my favorite things to do is to freeze two different bags of meat. In one I put the big slices of meat that I can thaw and enjoy in sandwiches or as a dinner. In the other bag I place chopped ham or turkey and then pull it out of the freezer whenever I am making soup or a casserole and it's ready to go!
But enough about leftovers. Let's talk about this weeks recipes! I have a really fun twist on the classic Reuben using kielbasa instead of corned beef. It's super easy to make and great for lunch or dinner. Then I'm sharing an Asian beef lettuce wrap recipe which can be made in no time. I also have a fun shrimp kabob recipe and a tasty pasta recipe.
For side dishes I'm sharing a bright lemon soup recipe perfect for spring as well as a Mexican side salad. Then for dessert I have an easy Pina Colada Fudge recipe, the best Instant Pot Cheesecake recipe I've ever made, and a fresh strawberry pie. I'm rounding out this weeks recipes with a fun pancake recipe, a kid friendly Air Fryer pizza recipe, and a cocktail you won't want to miss!
