This week I'm back with Meal Plan Mondays #12 and I'm thinking about Cinco de Mayo! That means I'm sharing several recipes to help get you ready for your own Mexican fiesta. Don't worry though, I still have plenty of yummy recipes for everyday dinners as well.
Cinco de Mayo is only a few weeks away so I've been thinking of Mexican recipes. If you get my newsletter you know that this past week I shared my favorite taco recipes, Mexican side dishes, and Mexican desserts. If you haven't signed up yet make sure you sign up in my sidebar or in the footer!
In addition to all of those I have three tasty entree recipes in the weekly meal plan. The first is my Taco Pizza. I don't know about you but I love a good taco pizza and this one is just about perfect. Plus it's something kids will love so the whole family can enjoy it and you can switch up the toppings based on what your family likes on your tacos.
The second recipe is an easy Fiesta Ranch Chicken Burrito Bowl. This one is great for people that are low carb because instead of serving it over top of rice you can just enjoy the toppings or put it over top of lettuce. There's an avocado cream sauce on top that can't be beat.
The last Cinco de Mayo inspired recipe is the wet burrito. If you've never made them before run, don't walk, to your kitchen. The sauce makes the burritos which are stuffed with beef, refried beans, and vegetables. You won't even need a side dish with this one!
In addition to those entrees I'm sharing my favorite Thai Meatballs served in lettuce wraps. I'm rounding out the entrees with Chicken stuffed with ham and Swiss cheese.
As for side dishes have a springy salad with homemade dressing, a potato salad, and spring asparagus. The desserts this week won't disappoint with a Margarita cheesecake (also great for Cinco de Mayo!), a Lemon yogurt cake, and chocolate chip brownies.
For my bonus recipes I went with brunch this week. I figure spring is here and Mother's Day is coming up so you may want to start planning for a tasty brunch. Plus, I always enjoy these recipes for dinner as much as breakfast or brunch so why not share them?
The strawberry lemon baked donuts are great for breakfast or dessert. Then we have the Raspberry Almond Scones topped with a coffee drizzle. I'm rounding it out with French Toast Cups.

This week I'm sharing Mexican entrees to help get your ready for Cinco de Mayo plus plenty of other recipes perfect for your weeknight meals.
