Summer is quickly approaching and I've been thinking about cookouts, grilling, and outdoor gatherings. We often grill dinner out during the week because it's quick and there isn't much clean up.
That's why this weeks Meal Plan Monday is focusing on summer. I'm sharing grilled entrees, cold side dishes, and super fun desserts that work for outdoor gatherings or family cookouts.
Everything I'm sharing this week can be portioned for a small family or recipes doubled or tripled for a larger gathering. I'm hoping to get everyone in the mood for cooking this summer and spending time with family and friends.
Entrees this week include a delicious Steakhouse Salad with homemade Ranch dressing, grilled kabobs, and awesome copycat burgers. Then there's an easy to make one pot lasagna when you don't feel like doing dishes and an easy Thai chicken stir fry.
For side dishes this week I have my favorite Southern Style Potato Salad that I take to all cookouts. Then we have a batch of sauteed vegetables to offer something healthy and flavorful Lemon Rice.
Desserts include a No Churn Coffee Ice Cream that is easy to make without any equipment needed. There's also a fun sugar cone cookie recipe and strawberry swirl cheesecake.
Bonus recipes include a brunch recipe and two cocktails. The quiche is a simple broccoli and cheese that's perfect for brunch or dinner. The pineapple mule is great for outdoor entertaining and the mango bellini is great for brunch!
