I don't know about you but I'm ready for summer! I've got just two weeks of school left and then I'll be free to bake and cook all summer long!
Since I'm thinking about summer my brain has been thinking about all of my summer favorites. Plus, all of the summer holidays are coming up so I want to share some recipes that are great for everyday dinners or can be shared with a group for summer gatherings.
While I love my cold salads with mayonnaise like potato salad and macaroni salad if I'm going somewhere that the food is going to be outside for a while I prefer to take a vegetable dish or a pasta salad with vinaigrette base so that they don't spoil in the sun.
We typically grill out a lot in the summer so I try to find side dishes that can either be grilled along side the meat or else cold salads that I can make ahead of time. I like cold salads because they can also be served several days in a row as a side dish if you make enough.
So this weeks menu is another week of foods for summer. The entrees include a grilled burger with an incredible Blueberry BBQ Sauce, Greek Pork Kabobs, chicken made in the Air Fryer, and an easy pasta dish.
For side dishes I'm sharing my favorite All American Potato Salad that goes great with all grilled foods. I'm also serving up my pasta salad with a green tea vinaigrette that's perfect for a cookout. I'm also including a tasty butternut squash recipe.
Since rhubarb is in season my bonus recipes center around that. I'm sharing honey rhubarb muffins and my favorite Strawberry Rhubarb Jam that can be kept in the refrigerator or canned. I'm finishing the bonus recipes off with a bruschetta salsa.
Now let's talk about desserts. Since I don't like to turn on the oven in the summer I've got two no bake desserts and one dessert that only needs to be in the oven minimally. My no bake cheesecake is fancied up with colorful berries while the no bake raspberry swirl cheesecake has a bright lemon cookie crust. I'm rounding out dessert with Brown Sugar Cinnamon Cupcakes.
