With the weather really heating up I can't stop thinking about summer and cooking out. We grill out all summer longer because it's super easy, meals are healthier, and the clean up is so easy.
We've already broken out the grill and have been grilling our meals 2 or 3 days a week. Soon I'm sure we'll be cooking out 4 or 5 days a week.
In the summer we usually like to have one big meal in the middle of the day, around 2 or 3 instead of eating lunch and dinner. This is because we don't like heating up the kitchen twice a day and we're usually super busy running around so it's just easier to eat once a day.
This also means that we have more room for dessert in the evenings since we aren't eating. Usually we'll have a scoop of ice cream or a piece of cake after our son goes to bed.
The only issue with the one big meal is that our son still needs to eat lunch and dinner. While lunch for him is usually super easy and thrown into the Air Fryer sometimes it's more difficult and takes longer to make him dinner. When he gets older he'll be able to do a mid-day meal but for now he needs both.
So what am I serving up this week? For entrees I've got an amazing grilled ribeye and grilled lobster tails. You can't go wrong with surf and turf! Then I have a tasty BBQ chicken sandwich and an easy weeknight pork dinner.
My first side dish is zucchini packets that you can throw on the grill with any grilled meat. Then we've got a Greek potato salad and some tasty rolls.
I'm not skimping on dessert this week and my Clown Ice Cream Sundaes are fun for kids and adults. Then we have an easy to make Lemon Poke Cake and a delicious Fresh Pineapple Cake.
