Meal Plan Mondays #21: Recipes from the Farmer’s Market

Fresh produce is all around and the farmer’s markets are open!  Get ready for Meal Plan Mondays #21 which is filled with recipes using fresh fruits and vegetables.

One thing I love about the summer is that I don’t have to work so I can spend time with my husband and son.  The other thing I love is that there are several farmer’s markets in town every week.

My son has been so into going to the farmer’s markets this year.  I think he likes to see the people and name the vegetables and fruits.  Plus I let him pay the farmer’s which makes him feel like a big boy.

I know every region has different produce right now so I tried finding recipes with a wide variety.  In my area the markets are full of peaches, plums, zucchini, leafy greens, green tomatoes, cucumbers, corn, and squash.  There’s also plenty of garlic and herbs.

I’m also keeping a lot of foods that can be grilled because summer isn’t over yet.  There’s still plenty of time to fire up the grill to make a delicious meal.

So what am I cooking up this week?   For main entrees I’m grilling Winey Burgers made with red wine and Barbecue Shrimp Skewers.  Then I’m serving up Mexican Street Corn Nachos, Everything But the Bagel Avocado Chicken, and Grilled Zucchini and Squash flatbread.

For side dishes I’m sharing loaded potato rounds, Buffalo Broccoli, and German Cauliflower Salad.  Now these are some vegetable side dishes the whole family will enjoy!

Next up is dessert and I’ve got my famous Peach Pie Bars and easy Cherry Pie Turnovers.  There’s even a No Bake Banana Split Cake that’s great for parties!

Rounding out the meal are my bonus recipes. I’ve got fresh guacamole that can be served on tacos or with chips.   Then there’s Baked Zucchini Fries that can be used as an appetizer, snack, or side.  I’m finishing up with an Old Fashioned Coke Float to wash it all down.
