This week is back to school for our school district so I am sharing simple weeknight meals for busy schedules! I know that I'm back to work, my son is playing soccer several days a week, and we are going to be doing a lot of running around.
That means I need meals that are either quick and easy for when I get home from work or else something that I can make or prep in advance. During the school year I often prep everything I can before going to bed the night before.
Vegetables are something that's easy to prep ahead of time. I often cut up my veggies the night before. If meat needs to be pounded, cut, or marinated I do that in advance as well.
I also like making something for breakfast on Saturday or Sunday that I can eat all week long. Sometimes this means baking something sweet like coffee cake or making something that can be frozen and pulled out of the freezer as needed.
For entrees this week I have a simple Farmer's Market Pizza, easy Cod and Potato Cakes, and Cajun Kabobs. Then I've got Egg Roll in a Bowl that I add tofu too but chicken or beef can easily be added instead. Finally I'm rounding out the entrees with a Chicken Hummus Salad.
Side dishes include a fresh Mexican Corn Salad and Broccoli Tots that can be made ahead of time or frozen and reheated. We've also got a great green onion cole slaw.
Desserts include a brownie recipe that can be packed for lunch and an out of this world Bourbon Peach Pie. I've also got a blueberry pie for the kids.
Finally I'm finishing up this weeks meal plan with my bonus recipes. I have a Crunchy French Toast Stick recipe that I love to make a freeze then pull out whenever I need an easy breakfast. Then there's a red pepper hummus that can be used as a snack, packed as a lunch, or used on a salad. I'm rounding out these recipes with the perfect cocktail because I'm going to need one after my first week back to school!
