Welcome to Meal Plan Mondays! This week I have a combination of healthier items and comfort food items. We currently have 6 inches of snow outside so I'm all about the warm, comforting food but whenever the new year comes I know a lot of people are looking for healthier options.
One thing I'm trying to do this year is to prep some of my dinners in the evening. This means chopping any vegetables that need to be chopped and checking to make sure I have all the ingredients I need so that when it comes time to cook I'm not scrambling for them.
Another thing I've found that has saved time is cutting my meat. While this seems like a small thing I've been cutting meat when I bring it home from the grocery store. So if I know I'm having been fajitas I'll thinly slice my beef, put it into a freezer bag, and freeze for later on in the week.
These are just a few ways I make my dinners quickly in the evenings. Since I have a 4 year old I can't really spend more than 30 minutes cooking or he becomes restless and no one is happy.
This week I'm sharing my favorite Stuffed Pepper Soup. All the flavor of stuffed peppers without having to stuff them! I'm also sharing my easy Spicy Beef Tacos.
For healthier entrees I have my super fun and vegetarian Color Splash Tofu and Quesadilla Salad. Then I'm sharing a delicious Chinese Chicken Salad. I'm rounding out my entrees with a quick and easy Lemon Garlic Pork and Broccoli Rice Bowl.
Then we have side dishes. The Wilted Pear and Shallot salad is the perfect winter salad. Then I have tasty Roasted Carrots with Goat cheese and pecans. Finishing off with an easy to make Mushroom Risotto.
While it isn't easy to have a healthy dessert I tried to give you a few options that make individual servings or use fruit in the recipes. The Individual Skillet Chocolate Chip Cookies are great when you need a cookie fix or you can put ice cream on top and serve for Valentine's Day. Pear and Pecan Dumplings with Caramel Sauce use a whole pear stuffed with pecans and chocolate. Then I have an Orange and Rhubarb Crisp that is sweet and tart.
For bonus recipes this week I have a tasty soup, a baked oatmeal for breakfast, and a hot coffee drink. Italian Sausage Vegetable Soup is a warm and hearty bowl. Baked Blueberry Oatmeal can be made on Sunday and enjoyed throughout the week. My Caramel Marshmallow Latte will warm you up and wake you up this winter.
