It's the last Monday of the month and I'm on Meal Plan #4! If you've missed any of the other weeks make sure to check back to get ideas for your weekly meals.
This week I'm sharing some real comfort food with you. I feel like this month has been so cold and so snowy that I all I want is warm and comforting food.
That's why I'm sharing my Chicken Pot Pie. This is a hearty comfort food with homemade gravy and a delicious crust. Plus I always make two and put one in the freezer for another night. I figure if you're putting in the work for one you might as well double it and have one ready to pop in the oven for later.
I'm also sharing my Instant Pot Mississippi Roast. This is a great recipe because it makes a ton. My husband and I usually eat it over top of mashed potatoes or noodles the first night and then we make French Dips out of it the second day to turn the leftovers into a totally new meal.
In addition to those yummy main dishes I have two awesome dessert recipes you're going to want to make for St. Patrick's Day. One of them includes Thin Mint Cookies so if you haven't paid a visit to your favorite Girl Scout you better get on it!

Meal Plan Mondays #4 : Easy Recipes for Weeknight Meals
Plan your weekly menu with these entrees, side dishes, desserts, and breakfast recipes!
This meal is delicious served over top of mashed potatoes or noodles and served with rolls or the maple cornbread below. It's also easily repurposed into French Dip Sandwiches the next day.
This baked version of eggplant parmesan will make less mess than frying it and it tastes delicious. Serve with the pear and pecan winter salad and rolls for a tasty dinner. You can also make this ahead of time and refrigerate overnight before reheating in the oven the next day.
Make a double batch and freeze one using the enclosed instructions so you have an easy meal for another night! You can also "cheat" and use refrigerated pie crust instead of making your own. Since it's a meal all in one pot serve it with the Black Midnight Cake or Thin Mint Stuffed Cookies for dessert.
Best served over rice. You can also serve with tortilla chips and use them to pick up the goodies from the bowl.
