No Churn Cherry Vanilla Ice Cream

Cool off this summer with delicious no churn vanilla flavored ice cream studded with fresh, sweet cherries.

Man has it been hot the last week.   I know it’s summer but when we go from a cool 65 or 70 degrees to a sweltering 90 degrees it gets a little rough.  

If there is one thing to help cool me off in the summer it’s ice cream.   I can go most of the year without eating ice cream but as soon as the weather heats up I seem to want it all the time. When I want something easy I usually make these fun Red, White, and Blue Ice Cream Sandwiches.

Last week my friend Leslie wrote me to say that she was going to an orchard to pick cherries and asked if I wanted some.  Since cherries are my absolute favorite fruit I said yes.   She ended up bringing back several buckets of cherries and I was able to take a few pounds home.  I knew the cherries would be awesome in a no churn ice cream.

Ingredients:

  • Heavy Whipping Cream
  • granulated sugar (this helps to stabilize the fresh whipped cream)
  • sweetened condensed milk
  • fresh cherries (pitted and stemmed)
  • cinnamon (optional)
  • vanilla extract

July just happens to be National Ice Cream Month so I knew I wanted to share some of my favorite ice cream recipes.  Now I don’t have an ice cream maker so whenever I do make my own ice cream it’s always no churn.   Two of my favorites are No Churn Lemon Shortbread Ice Cream and No Churn Patriotic Funfetti Ice Cream.

I don’t mind making it this way and as long as I keep the base the same I can add any ingredients to it I want and it comes out delicious.   In this case I added vanilla extract and a hint of cinnamon to the base along with plenty of fresh cherries.

It only takes a few ingredients to make this awesome No Churn Cherry Vanilla Ice Cream

What is no churn ice cream?

No-churn ice cream is a type of homemade ice cream that doesn’t require an ice cream maker.     Traditional ice cream recipes involve churning the mixture in an ice cream machine to incorporate air which creates a smooth texture.  With no-churn ice cream the same creamy texture is achieved without the need for churning.

how do I make no churn ice cream?

The basic ingredients for no-churn ice cream include heavy cream, sweetened condensed milk, and flavorings and add-ins.  The heavy cream is whipped with a bit of sugar until stiff peaks form, and then the sweetened condensed milk is mixed in.  The add-ins are then gently folded into the whipped cream. This mixture is poured into a container and frozen until it reaches the desired consistency.

Can I use frozen cherries?

If you don’t have fresh cherries available you can certainly use frozen cherries.  Buy them, defrost them, and then chop them up and add them to the ice cream.  Don’t use maraschino cherries.

How long does no churn ice cream last?

No-churn ice cream can typically be stored in the freezer for up to 2-3 months. Make sure that it is in an air tight container.  However, the texture and flavor are best within the first two weeks of freezing. Over time ice crystals may form which causes the ice cream to become less creamy.

I’ve always loved cherry vanilla ice cream so that’s the flavor I went with.  I made the no churn ice cream base out of heavy whipping cream and sweetened condensed milk and then added in the cherries.

Pitting cherries can be a pain and it could take a while. I use a cherry pitter because it makes fast work of pitting the cherries. My favorite one is the OXO Cherry Pitter.

You can add any type of cherries you have on hand. I’ve made this with just Bing cherries and I’ve made it with a medley of cherry types. I like using the medley of cherries because some were super sweet while others added a nice contrast of tartness to the ice cream.  I finished with vanilla extract.

The ice cream ended up being fairly sweet but the sweetness was cut by the tart cherries which worked well.  The vanilla flavor was a little light and next time I’ll probably scrape a vanilla bean into the cream mixture to give it some added flavor.  Overall I found this No Churn Cherry Vanilla ice cream to be refreshing and perfect for enjoying in the summer.

No Churn Cherry Vanilla Ice Cream

A delicious no churn ice cream using fresh cherries and vanilla!

Ingredients

  • 2 c. heavy whipping cream
  • 2 Tablespoons sugar
  • 1 (14 oz) can sweetened condensed milk
  • 2 c. fresh cherries, chopped
  • 1/2 teaspoon cinnamon
  • 1 Tablespoon vanilla extract

Instructions

  1. Place the heavy whipping cream and sugar in a large bowl. Beat with a mixer on medium high speed until still peaks form.
  2. Gently fold in the sweetened condensed milk.
  3. Fold in the cherries, cinnamon, and vanilla and gently mix well.
  4. Pour the mixture into a loaf pan. Place a piece of plastic wrap on top of the ice cream and freeze for at least 4 hours or over night.
  5. Before serving remove from freezer and let sit for 5 minutes before scooping.

    1. I live in a big cherry growing area and can’t believe I’ve never made cherry ice cream. Yours looks so good I’ll have to change that!

    2. I love this ice cream and that I can use frozen (thawed) cherries, too. The answer, however, to your question on how long does no-churn ice cream last is….not long in my house! This one will be gone soon after it’s made!
