Campfire S’mores Banana Boats

With just 4 ingredients these easy and delicious S’mores Banana Boats filled with chocolate chips, mini marshmallows, and graham crackers bits will be your new camping favorite!

When I was a kid I was in Girl Scouts.   It was one of those activities I did in elementary school and had a really good time doing.   I made friends, did fun activities, and I got to go to camp.

One of the best parts of camps were the desserts!   I loved making s’mores over the campfire.   We also made mountain pies and banana boats.  I still think of those days and making all those things. 

While I’ve made s’mores probably a million times since those days I don’t think I’ve ever made a banana boat since.  I happen to have a bunch of ripe bananas sitting on my counter top and thought why not combine s’mores and banana boats to make S’mores Banana Boats?

Ingredients:

  • bananas
  • chocolate chips
  • graham crackers
  • mini marshmallows

To make the banana boats slice the bananas length wise with the peel still on being careful not to go the whole way through.

Sprinkle chocolate chips inside the bananas.  Then put graham cracker pieces on top of the chocolate chips.  Finally, put mini marshmallows on top.

Wrap the bananas in foil and place either in the embers of the campfire or on a grate over top of the flames for 5-7 minutes.   Carefully remove and let cool one minute.   Open it up and enjoy with a spoon or fork.

The smell of these banana boats was amazing.  It smelled with bananas mixed with chocolate and s’mores.  It brought back so many memories from my childhood and I couldn’t wait to dig in.

I will say that some of the marshmallows stuck to the top of my foil so next time I might spray it a little bit.  Otherwise it was ready to eat.

In order to eat these use a fork or spoon and dig into the banana.   Bring out a chunk of the banana along with the topping and enjoy the gooey, sweet flavors all together.

Can I cook them without a campfire?

Yes!   You can make these on the grill by using the same instructions and grilling for about 5 minutes.  I’ve also made them in my Air Fryer and they take around 7 minutes at 400 degrees.

Can I use chocolate bars instead of chocolate chips?

Of course!   If you are camping and have chocolate bars just break them into tiny pieces and put them in the bananas.

What if I only have large marshmallows?

Cut each marshmallow into 6 pieces then stuff them into the bananas.  I’ve done that several times and it works just as well.

What if my bananas aren’t ripe?

If your bananas aren’t ripe at all stick them in the foil and cook them for 2-3 minutes before adding all the toppings.  This will help soften them up.

What if my bananas are overly ripe?

That’s fine!   You can see in the pictures mine were almost black which is fine because we want them super soft to be able to scoop them out with the chocolate and marshmallows!

The first bite took me back to Girl Scout Camp.  The bananas get really sweet when they are grilled and have a lovely fruit flavor.

The chocolate was melted and stuck to the graham cracker pieces.   The marshmallows were so gooey and delicious.  The entire thing together is the perfect campfire dessert.

Campfire S'mores Banana Boats

Ingredients

  • 4 bananas
  • 1/3 c. chocolate chips
  • 1/4 c. graham crackers broken into pieces
  • 1/3 c. mini marshmallows

Instructions

  • Slice the banana lengthwise with the peel still on making sure not to cut the entire way through the banana.
  • Divide the chocolate chips between the bananas, pushing them into the banana.
  • Sprinkle the graham cracker pieces over top of the chocolate chips.
  • Place the mini marshmallows on top of the graham cracker pieces pressing down on them so that they stick to the graham crackers.
  • Wrap each banana in foil.
  • Place either in the embers of a campfire or on a grate over top of the campfire and cook for 5-7 minutes or until the bananas have softened and the chocolate is melted.
  • Remove from the fire and cool 1 minute.
  • Remove from the foil and enjoy!

  1. The first thing that popped into my head when I saw the recipe title was “We are Girl Scouts green and jolly…” haha! I probably haven’t had them since them, which is a shame because they are so good.
