Easy Funfetti Cake Batter Cookie Bars

Easy Funfetti Cookie Bars are made with funfetti cake mix, sugar cookie mix, tons of sprinkles, and are topped with homemade buttercream frosting.

I’ve been eyeing up a few Funfetti recipes recently.  I feel like any recipe with rainbow sprinkles lightens the mood and is just fun to eat.  I bought two giant packages of sprinkles from my friend and I’ve been itching to use them.

I’ve made Funfetti recipes before.  My Funfetti Cupcakes are a fun and easy to decorate creation.   When you want a sweet treat for breakfast Funfetti Vanilla Donuts can’t be beat.  For special occasions I love making these huge Crumbl Birthday Cake Cookies.

The cool thing about this recipe is that it uses two baking mixes.  I know I’m not one to use a lot of mixes but in this case you need to do it.   It makes all the difference in the world.

The awesome part is that while I was cleaning out my pantry I realized that I had about 8 baking mixes in there that need to be used.  I had a box of Funfetti Cake mix and a bag of sugar cookie mix which is what I needed for this recipe!  That means I would have a delicious treat and I would use two things out of my pantry.

I was a little skeptical how a cookie mix and a cake mix would come together in a tasty cookie but I tried it anyhow.   I mixed the two together along with some butter, eggs, sprinkles, and a little touch of vanilla.  There was a ton of batter!

I poured it into the pan and was a little concerned it was going to grow out of the pan but I went for it.  While the batter was baking I whipped up a batch of my homemade buttercream frosting.

Once the bars were cooled I frosted them with the buttercream and put more sprinkles on top!  They looked great and when I tasted them I was shocked!  They are so thick but really soft and chewy.  The frosting adds a layer of sweetness and the sprinkles are just so fun.

These bars would feed a large crowd and would be great to take to parties or events because they travel well and you can cut them in to small pieces.

Easy Funfetti Cake Batter Cookie Bars

Ingredients

For the cookie bars:

  • 1 pouch 1 lb. sugar cookie mix
  • 1 box 15.75 oz Funfetti cake mix
  • 3 eggs
  • 2 sticks 1 cup butter, melted
  • 1 tablespoon vanilla
  • 1/4 c. rainbow sprinkles

For the frosting:

  • 1 stick 1/2 cup butter, softened
  • 1 1/2 c. powdered sugar
  • 2 tablespoons milk
  • 1 tablespoon vanilla
  • 1/4 c. rainbow sprinkles

Instructions

  • Preheat the oven to 350 degrees. Spray a 9 x 13 baking dish with cooking spray and set aside.
  • In a large bowl combine the cookie mix, cake mix, eggs, butter, and vanilla. Mix until well combined.
  • Add the sprinkles and gently fold them in.
  • Pour the batter into the prepared pan and spread it out evenly.
  • Bake for 30-35 minutes or until the edges are golden brown and the center is puffy.
  • Allow to cool completely on a wire rack.
  • To make the frosting put the butter in a large bowl. Using a hand mixer, beat on medium speed until creamy.
  • Add in the powdered sugar, vanilla, and 2 tablespoons of milk. Mix on high for 1 minute. Add another tablespoon of milk if desired.
  • Spread the frosting over the cooled cookie bars. Sprinkle with the rainbow sprinkles.
  • Cut into 30 bars and serve.
