TORTELLINI VEGETABLE SOUP

A hearty vegetable soup made with a variety of fresh vegetables, frozen vegetables, plenty of spices, and cheese tortellini.

– olive oil – onion, chopped – celery ribs, chopped – carrots, chopped – garlic cloves, minced – corn

ingredients

Pour the olive oil in a large stock pot over medium heat.

Add in onions, celery, carrots, and garlic. Saute for 10 minutes.

Add in the corn, peas, potatoes, vegetable broth, rosemary, thyme, and black pepper. Bring to a boil.

Reduce heat, cover, and simmer for 30 minutes. Stir in the diced tomatoes and cheese tortellini.

Cook for 15 minutes.   Remove from heat and serve.
