SLOW COOKER BEEF VEGETABLE SOUP

Slow Cooker Beef Vegetable Soup combines your favorite vegetables with  hearty beef in a delicious broth that is sure to warm you up and fill  you up this winter.

– carrots, peeled and chopped – celery stalks, chopped – onion, chopped – cloves garlic, minced – olive oil – beef stew meat

ingredients

In a skillet heat the olive oil over medium high heat.  Add in the onions, celery, and carrots and saute for 5 minutes.

Add in the garlic cloves and saute an additional minute. Push the vegetables to the side of the pan and add the beef.  Saute for 5 minutes or until the beef is browned.

Add the mixture to the slow cooker. Pour the beef or vegetable broth into the slow cooker on top of the meat and veggies.

Add the corn, green beans, peas, tomatoes, and potatoes. Mix well. Sprinkle with sage and thyme. Mix again.

Cover and cook on low for 8 hours.
