Preheat the oven to 425 degrees.
Spread the french fries on a baking sheet and toss with olive oil. Sprinkle with salt and pepper.
Bake for 25 minutes or until the fries are crisp and golden brown. Remove from oven.
Meanwhile, toss the onions in a large bowl with the vinegar, mustard, and fresh chives. Let stand 15 minutes. Whisk in the olive oil.
Add the fries to the bowl and toss to coat. Top with fresh dill.
If making in an Air Fryer, toss the fries with the olive oil, salt, and pepper and cook for 15 minutes at 380, shaking twice during cooking time then follow steps 4 and 5 to finish.
