Caramel Apple Pecan Cobbler

Warm and soft apples in a spiced caramel sauce studded with crunchy pecans and topped with an oat pecan topping makes for the perfect fall dessert.

Ingredients

For the apple filling:

  • 3 large or 4 medium apples peeled, cored, and sliced (I used half Granny Smith, half Gala)
  • 1/2 c. brown sugar
  • 1 teaspoons lemon juice
  • 2 teaspoons corn starch
  • 1 teaspoons cinnamon
  • 1/2 c. Millican chopped pecan pieces
  • 3 teaspoons caramel sauce

For the topping:

  • 3/4 c. old fashioned oatss
  • 1 c. flour
  • 1/2 c. brown sugar
  • 1 teaspoons baking powder
  • 1 teaspoons salt
  • 1/4 c. Millican chopped pecan pieces
  • 1 stick butter

Instructions

  • Preheat the oven to 375 degrees. Spray an 8 x 8 baking dish with cooking spray and set aside.
  • In a medium bowl combine the apples, brown sugar, lemon juice, corn starch, cinnamon, and pecans. Mix well and add to the baking dish.
  • Pour the caramel sauce over top of the apple mixture.
  • In a medium bowl combine the oats, flour, brown sugar, baking powder, salt, and pecans. Mix well.
  • Using your hands, mix the butter pieces into the flour mixture until the mixture resembles wet sand.
  • Sprinkle the topping over top of the apples.
  • Bake for 30-35 minutes.
  • Turn your oven to broil and broil for 1-2 minutes or until the top is dark golden brown.
  • Remove from oven and serve with ice cream or whipped cream.
