Dragon Fruit and Blood Orange Salad with Pecans

Ingredients

For the salad:

  • 6 c. mixed greens
  • 1/2 dragon fruit cut into 1/2 inch pieces
  • 2 blood oranges peeled and thinly sliced horizontally
  • 1/2 c. feta cheese crumbles
  • 1/3 c. pecan halves

For the vinaigrette:

  • 1/3 c. olive oil
  • 1/3 c. red wine vinegar
  • 2 teaspoons fresh orange juice
  • 1 teaspoons honey
  • 1 teaspoons oregano
  • 1 teaspoons black pepper
  • 1 teaspoons salt

Instructions

  • Divide the mixed greens between four plates.
  • Sprinkle the chopped dragon fruit on top. Place 4 or 5 blood orange slices on top of the lettuce.
  • Sprinkle with the feta and pecans.
  • To make the vinaigrette place all ingredients in a mason jar and screw on the lid. Shake vigorously for 30 seconds.
  • Serve salads with dressing.
