Mocha Brownies with Cafe Latte Frosting

Ingredients

For the brownies:

  • 1/2 c. cocoa powder
  • 1 1/4 c. flour
  • 1 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1 c. granulated sugar
  • 1/2 c. melted butter
  • 2 eggs
  • 1 teaspoons vanilla
  • 1/4 c. strong brewed coffee

For the buttercream:

  • 1/2 c. butter softened
  • 2 teaspoons milk
  • 2 teaspoons strong brewed coffee
  • 2-3 c. powdered sugar

Instructions

  • Preheat the oven to 350 degrees.
  • Spray an 8 x 8 baking dish with cooking spray and set aside.
  • In a medium bowl combine the cocoa powder, flour, baking powder, and salt. Mix well then set aside.
  • In a large bowl mix together the butter and sugar. Add in the eggs and mix until combined.
  • Stir in the vanilla.
  • Add half of the flour mixture to the butter mixture along with the brewed coffee. Mix well. Add remaining flour mixture and mix until combined.
  • Pour the batter into the prepared pan and cook for 30 minutes.
  • Remove from oven and cool completely.
  • To make the frosting beat the butter in a large bowl. Add in the powdered sugar until a thick consistency is reached.
  • Add the milk and coffee and beat until smooth. Add more powdered sugar if needed.
  • Spread the frosting on top of the brownies and cut into 16 pieces.
