Snowman Cupcakes

Ingredients

For the cupcakes:

  • 1 stick butter softened
  • 3/4 c. sugar
  • 1 egg
  • 1 teaspoons vanilla extract
  • 1 1/2 c. flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1/2 c. milk

For the frosting:

  • 2 sticks butter softened
  • 1 teaspoons vanilla
  • 4 c. powdered sugar
  • 2-3 teaspoons milk
  • 1/2 c. clear sanding sugar
  • candies to make snowman faces

Instructions

  • Preheat the oven to 350 degrees. Line a muffin tin with cupcake liners.
  • In a large bowl cream together the butter and sugar.
  • Beat in the egg.
  • Add the vanilla and mix well.
  • In a medium bowl combine the flour, baking powder, and salt.
  • Add half the flour mixture tot he butter mixture and mix well.
  • Stir in the milk and mix until combined.
  • Add the remaining flour mixture and mix until just combined.
  • Spoon the batter into the prepared muffin cups filling each one 3/4 of the way full.
  • Bake for 22-24 minutes.
  • Remove from oven and cool completely on a wire rack.
  • To make the frosting beat the butter until smooth. Add the powdered sugar a half cup at a time until smooth.
  • Add in the vanilla and milk and mix until smooth.
  • Top each cupcake with a spoonful of frosting. Dip the cupcake into the sanding sugar to cover completely.
  • Use candies to make eyes, nose, and mouth.
