A combination of all my breakfast favorites including eggs, hash browns, sauteed vegetables, and Kerrygold Skellig Sweet Cheddar Cheese, all in one delicious breakfast casserole.
Preheat the oven to 375 degrees. Spray and 8 x 8 baking dish with cooking spray and set aside.
Cook the Italian sausage in a medium skillet over medium heat until browned. Remove from skillet and set aside.
Heat the garlic & herb butter in a medium skillet over medium heat. Add in the peppers and onion and saute for 5-7 minutes or until the vegetables have softened. Remove from heat.
In a large bowl beat the eggs for 2 minutes. Add in the milk and beat for 30 seconds.
Add in the hot sausage, sauteed vegetables, 3/4 cup Skellig cheese, hash browns, and black pepper. Mix well and pour into prepared pan.
Sprinkle the casserole with the remaining cheese.
Bake for 45 minutes or until the edges are browned and the center has set. Remove from oven and cool for 5 minutes before cutting.
