Pink Moscato Cupcakes

Ingredients

For the cupcakes:

  • 2 c. flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 2 egg whites
  • 1 teaspoon vanilla
  • 1 stick butter
  • 1/2 c. sugar
  • 1 1/4 c. Gallo Family Vineyards Moscato

For the frosting:

  • 3/4 c. butter
  • 1/4 c.Gallo Family Vineyards Pink Moscato
  • 1 Tablespoon strawberry syrup
  • 4 c. powdered sugar

Instructions

  • Preheat the oven to 350 degrees.
  • Place cupcake liners in 16 muffin cups. Set aside.
  • In a medium bowl combine the flour, baking powder, and salt. Mix well and set aside.
  • In a large bowl combine the egg, egg whites, and vanilla. Beat until fluffy. Add in the butter and sugar and beat until just combined.
  • Add half the dry ingredients to the butter mixture and mix well. Stir in the Moscato, mixing until combined. Add in the remaining dry ingredients and stir until just combined.
  • Pour the batter into the prepared muffin cups, filling almost to the top. Bake for 17-20 minutes or until a toothpick inserted into the center comes out clean.
  • Cool on a wire rack.
  • Meanwhile, place the butter in a mixing bowl and beat on medium speed. Add in the Pink Moscato and strawberry syrup and beat for 1 minute. The mixture will not be smooth. Add in the powdered sugar one cup at a time until the frosting is the desired thickness.
  • Pipe the strawberry Moscato frosting onto the cupcakes.
