Apple Cinnamon Baked Oatmeal

Delicious oatmeal baked in the oven along with apples and cinnamon then cut into squares for an awesome grab and go breakfast that can be eaten hot or cold.

Ingredients

  • 3 c. oats
  • 2 teaspoons baking powder
  • 1 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 1/3 c. brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 c. milk
  • 1/2 c. pecans chopped
  • 2 apples chopped

Instructions

  • Preheat the oven to 375 degrees. Spray a 9 x 13 pan with baking spray and set aside.
  • In a bowl combine the oats, baking powder, sea salt, cinnamon, and brown sugar. Set aside.
  • In a large bowl combine the eggs, vanilla, and milk. Mix well.
  • Add the dry ingredients to the wet ingredients and mix until just combined.
  • Fold in the pecans and apples. Pour into the prepared pan.
  • Bake for 30 minutes. Remove from oven and cool completely.
  • Cut in to 9 pieces and enjoy.
