Blood Orange Loaf Cake

Sweet Blood Orange Cake is made in a loaf pan and then is topped off with a sweet and tart blood orange glaze and fresh blood orange slices.

Ingredients

  • 1/2 c. 1 stick butter
  • 1 1/4 c. sugar
  • 2 eggs
  • zest of one blood orange
  • 1 1/2 c. flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 2 Tablespoons blood orange juice
  • 1/3 c. milk
  • 1 teaspoon vanilla
  • 1 c. powdered sugar
  • 2 1/2 Tablespoons blood orange juice

Instructions

  • Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray and set aside.
  • In a large bowl cream together the butter and sugar.
  • Add in the eggs and mix well.
  • Stir in the blood orange zest and set aside.
  • In a medium bowl combine the flour, baking powder, baking soda, and salt.
  • In a small bowl combine 2 tablespoons of blood orange juice, the milk, and the vanilla.
  • Add half of the flour mixture and milk mixture to the butter and sugar mixture and mix until well combined.
  • Add the remaining flour and milk mixture to the butter mix and mix until combined.
  • Pour the batter into the prepared loaf pan.
  • Cut a blood orange in half. Thinly slice the orange and lay the slices on top of the cake.
  • Bake for 1 hour or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven and cool completely on a wire rack.
  • To make the glaze combine the powdered sugar with 2-3 tablespoons of blood orange juice and whisk until smooth.
  • Pour the glaze over top of the cake and let harden for 15 minutes.
