Instant Pot Whiskey Barbecue Pork

Ingredients

  • 1/2 c. brown sugar
  • 1 can 6 oz tomato paste
  • 1/3 c. barbecue sauce
  • 3 Tablespoons whiskey
  • 1/2 c. water
  • 2 Tablespoons Worcestershire sauce
  • 4 garlic cloves minced
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 Tablespoon hot sauce
  • 1 teaspoon cumin
  • 1 pork roast or pork loin 3-4 lbs
  • 1 medium onion quartered
  • 8 hamburger buns

Instructions

  • In the Instant Pot combine the brown sugar, tomato paste, barbecue sauce, whiskey, water, Worcestershire sauce, garlic cloves, chili powder, salt, pepper, hot sauce, and cumin.
  • Add the pork roast or pork loin and spoon sauce over top.
  • Place the onion quarters around the pork.
  • Close the Instant Pot and set on high pressure for 45 minutes.
  • After it is done cooking allow the Instant Pot to release pressure naturally for 15 minutes then release manually.
  • Remove the pork from the Instant Pot and shred.
  • Return to the pot and mix well so that the pork is covered in sauce.
  • Serve on top of hamburger buns.
