Almond Sugar Cookies

Ingredients

  • 1 c. butter softened
  • 3/4 c. sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/4 c. all purpose flour
  • 1 c. almond flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pink yellow, and bright blue sugar

Instructions

  • In a large bowl cream together the butter and sugar. Beat in the egg and vanilla.
  • In a medium bowl combine the all purpose flour, almond flour, baking powder, and baking soda.
  • Add the flour mixture to the butter mixture and mix well.
  • Roll the cookie dough into a ball and refrigerate for 30 minutes to make it easier to handle.
  • Preheat the oven to 400 degrees.
  • Roll the dough into 1 inch balls. Dip each ball into the colored sugar. Place the cookies on an ungreased baking sheet and flatten slightly with your palm.
  • Bake for 7-8 minutes or until the cookies have puffed up.
  • Cool for 1-2 minutes on the baking sheet and then remove to a wire rack to cool completely.
