Easy OREO Cupcakes

Delicious vanilla cupcakes mixed with OREO Cookies topped off with vanilla OREO frosting and a whole OREO Cookie.

Ingredients

  • 1 box yellow cake mix
  • 1 c. water
  • 1/2 c. coconut oil
  • 3 eggs
  • 1 package OREO Cookies
  • 1 container vanilla frosting

Instructions

  • Preheat the oven to 350 degrees. Line 2 muffin tins with 24 cupcake liners. Set aside.
  • In a large bowl mix the yellow cake mix, water, coconut oil, and eggs. Mix until well combined.
  • Place 20 OREO Cookies in a gallon size zip top baggie. Seal. Use a mallet and and crush the OREO Cookies.
  • Remove half of the crushed cookies and add them to the cake batter. Mix until combined.
  • Divide the batter between the muffin cups, filling each 3/4 of the way full.
  • Bake for 20 minutes or until a toothpick inserted into the center comes out clean. Cool on a wire rack.
  • Meanwhile, dump the vanilla frosting into a medium bowl. Add the remaining crushed OREO Cookies and mix well.
  • Spread the OREO frosting onto the OREO Cupcakes. Top each cupcake with a whole OREO Cookie.
