Chocolate Chip Zucchini Bread

Chocolate Chip Zucchini Bread is golden brown and crunchy on the outside with a soft inside studded with partially melted chocolate chips and plenty of zucchini.

Ingredients

  • 1 c. 2 sticks butter
  • 1 c. sugar
  • 3 eggs
  • 1 Tablespoon vanilla
  • 1 large zucchini grated (about 2 cups)
  • 2 c. flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 c. chocolate chips
  • ½ c. pecans chopped (optional)

Instructions

  • Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray. Set aside.
  • In a large bowl combine the butter and sugar. Mix well.
  • Add in the eggs and vanilla.  Mix well.
  • Add the zucchini and stir until combined.
  • In a medium bowl combine the flour, cinnamon, baking soda,
    baking powder, chocolate chips, pecans, and salt.  Mix to combine.
  • Add the dry ingredients to the wet ingredients.  Mix well.
  • Pour the batter into the prepared loaf pan. Bake for 1 hour.
  • Remove from oven and cool completely on a wire rack.
