Chocolate Chip Zucchini Bread is golden brown and crunchy on the outside with a soft inside studded with partially melted chocolate chips and plenty of zucchini.

Ingredients

c.
2 sticks butter
1
c.
sugar
3
eggs
1
Tablespoon
vanilla
1
large zucchini
grated (about 2 cups)

c.
flour
1
teaspoon
cinnamon
1
teaspoon
baking soda
1
teaspoon
baking powder
1/2
teaspoon
salt
1
c.
chocolate chips
½
c.
pecans
chopped (optional)
Instructions
Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray. Set aside.
In a large bowl combine the butter and sugar. Mix well.
Add in the eggs and vanilla. Mix well.
Add the zucchini and stir until combined.
In a medium bowl combine the flour, cinnamon, baking soda,
baking powder, chocolate chips, pecans, and salt. Mix to combine.
Add the dry ingredients to the wet ingredients. Mix well.
Pour the batter into the prepared loaf pan. Bake for 1 hour.
Remove from oven and cool completely on a wire rack.
