Mashed Cauliflower with Parmesan

A great way to switch up traditional mashed potatoes, substitute healthier cauliflower in its place!

Ingredients

  • 1 large head of cauliflower cut into florets
  • 1/2 c. Parmesan cheese shredded
  • 1/3 c. cream half and half, or milk
  • 3 Tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  • Pour 2 cups of water in a large saucepan and add in the cauliflower. Bring to a boil. Cover and cook for 15 minutes.
  • Drain the cauliflower, pour into a bowl, and mash.
  • Add the cheese, cream, butter, salt, and pepper. Stir until well combined.
  • Serve with addition cheese or sprinkle with parsley.
