Healthy Whole Wheat Apple Banana Bread

This bread is a quick and easy recipe for tender banana bread studded with bits of chopped apples and cozy spices for a taste of fall in every bite!

Ingredients

  • 2 c. whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon salt
  • 3 Tablespoons butter
  • 1/4 c. brown sugar
  • 2 eggs
  • 1 Tablespoon vanilla
  • 1/4 c. plain nonfat Greek yogurt
  • 1 medium banana mashed
  • 1/3 c. milk
  • 2 apples finely chopped

Instructions

  • Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray and set aside.
  • In a medium bowl combine the flour, baking powder, cinnamon, nutmeg, and salt.  Mix well and set aside.
  • In a large bowl cream together the butter and brown sugar.
  • Add the eggs and vanilla to the butter mixture and mix well.
  • Stir in the Greek yogurt.
  • Mash the banana and mix it into the butter and sugar mixture.
  • Add half the dry ingredients to the wet ingredients and mix until combined.  
  • Add in the milk and stir until well combined.  Mix in the remaining dry
    ingredients until just incorporated.
  • Add the apples and gently fold them in.
  • Spread the batter into the prepared pan.   Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and cool for 10 minutes.
  • Run a butter knife around the edge of the pan and turn onto a wire rack. Cool completely and then slice.
