Cake Mix Biscotti

Rich, chocolate biscotti made with a Cake Mix and just 5 ingredients is an easy to make and delicious cookie!

Ingredients

  • 1 box of Devil's Food Cake mix
  • 1 1/4 c. flour
  • 1 stick butter melted
  • 2 eggs
  • 1/2 c. chopped pecans
  • 1/3 c. white chocolate
  • sprinkles optional

Instructions

  • Preheat the oven to 350 degrees. Line a large baking sheet with parchment paper.
  • Mix together the devil's food cake mix, flour, butter, eggs, and pecans. Mix until well combined.
  • Place the dough on the parchment paper and shape into a 1/2 inch thick rectangle.
  • Bake for 30-35 minutes.
  • Remove from oven and cool for 10 minutes. Transfer to a cutting board.
  • Using a serrated knife cut the baked cookie into 1/2 inch slices.  I like to cut on a diagonal but you can cut horizontal as well.
  • Turn the cookie slices on their slide and place back on the baking sheet.
  • Bake for 15 minutes.  Remove from oven and cool completely on a wire rack.
  • Place the white chocolate in a microwave safe bowl and heat for 45 seconds. Mix well.
  • Continue heating in 20 second intervals, mixing after each heating, until the white chocolate is smooth and melted.
  • Place the chocolate in a zip top baggie. Cut off the end and drizzle over top of the biscotti.
  • Add sprinkles to the tops if desired.
