Caramelized Onion, Spinach, and Bacon Pizza

Ingredients

  • 1 pizza dough
  • 1 large sweet onion thinly sliced
  • 1 Tablespoon olive oil
  • 1 teaspoon sugar
  • 5 slices bacon
  • 1 c. baby spinach leaves cut in half
  • 1 1/2 c. marinara sauce
  • 2 teaspoon Italian seasonings
  • 2 c. mozzarella cheese shredded

Instructions

  • Preheat the oven to 425 degrees.
  • While the oven is heating, add the onion, olive oil, and sugar to a medium skillet over medium heat. Cook for 20 minutes, stirring occasionally, until the onions have caramelized.
  • Meanwhile, cook the bacon in a skillet for 3-4 minutes per side or until it is brown and crisp. Place the bacon on a paper towel lined plate to drain. Cut into small pieces
  • Stretch the pizza dough into a pizza pan that is either sprayed with cooking spray or sprinkled with corn meal. Bake for 10 minutes.
  • Remove the partially baked crust from the oven and spread with pizza sauce. Sprinkle with Italian seasonings.
  • Sprinkle the cheese evenly over top of the sauce.
  • Divide the caramelized onions, bacon, and spinach evenly over top of the cheese.
  • Bake the pizza for an additional 10-12 minutes or until the cheese is melted and the crust is browned.
