Rosemary Mashed Potatoes

Ingredients

  • 4 large potatoes
  • 3/4 c. Lactaid milk
  • 6 Tablespoons butter
  • 2 teaspoons salt
  • 3 Tablespoons fresh rosemary minced
  • 1 teaspoon garlic powder optional

Instructions

  • Peel the potatoes and chop into 2 inch pieces.
  • Place the potatoes in a large pot and cover with water. Bring the water to a boil over high heat and continue to boil for 20 minutes.
  • Remove the potatoes from the heat and drain.
  • Place the drained potatoes in a large bowl. Mix with a hand mixer until the potatoes are broken up.
  • Add in the milk and butter and beat with the mixer until smooth.
  • Add in the salt, rosemary, and garlic powder and mix for 1 minute.
  • Serve with additional rosemary or margarine if desired.
